Blueberry Honey Process: Fresh blueberries are first fermented with natural yeast to create a rich, aromatic juice. Coffee cherries are then depulped, keeping the sticky mucilage layer, and soaked in the blueberry juice before being sealed for low-oxygen fermentation.
Careful control of time and temperature allows the coffee to absorb bright blueberry notes and soft, creamy acidity, adding complexity without hiding its natural taste.
After fermentation, the coffee is slowly dried on raised beds under the sun until it reaches the ideal moisture level, helping preserve clarity and balance in the cup.
