Roaster Comments: In the spirit of Chinese New Year, we brought in these Washed Mandarin processed beans to introduce a tangerine twist into our current offerings. We tried to keep our roast shorter, to retain the citrus acidity. We also used a lot more radiation to penetrate the beans so we get a more evenly roasted coffee, despite being a lighter roast.
